Baked Apples with Vanilla Ice Cream

One of my favorite activities to do with my kids during this time of year is apple picking! My girls love to run through the orchards grabbing apples off the trees and sneaking bites. I’ll usually end up with bags of apples, half of them with little bites taken out of them!

This means I have to make something with them, and quickly or else the apples will go rotten. Usually that means apple pie, which is one of my favorite treats to have with ice cream. But you can only have apple pie so often – which led to the creation of this treat!

Baked apple-anything is wonderful because you get all of the flavors of apple pie, but without the crust, which usually adds more calories and sugar to an already sweet treat. And nothing makes soft, warm, and spiced apples taste better than cold vanilla ice cream on top, right?

Baked Apples with Vanilla Ice Cream

Baked Apples

  • 1 cup sliced apples, skins removed if preferred
  • 1 tsp. cornstarch
  • 3/4 tsp. cinnamon
  • ¼ tsp. nutmeg
  • 2 Tbsp melted coconut oil
  • 1 Tbsp coconut sugar
  • 1 Tbsp flour

Vanilla Ice Cream

  • 1 cup vanilla greek yogurt, or regular yogurt frozen into cubes in an ice cube tray
  • 1 tsp. vanilla bean paste


  • 1 banana frozen
  • 1 tsp. vanilla bean paste
  1. Preheat the oven to 425 degrees. In a bowl, mix together all of the baked apple ingredients. Grease a large ramekin, and add the apples to the ramakin.
  2. Bake for 20 minutes, or until the apples are soft.
  3. When the apples are almost done, make your ice cream.
  4. Run the cubes, or banana slices, through the Dessert Bullet Chute and into a bowl.
  5. Stir in the vanilla bean paste, then scoop on top of the warm apples and eat immediately!
